This is a semi-hard, Ewe’s milk cheese, handmade by Peter Humphreys at White Lake Dairy, on Bagborough Farm in Shepton Mallet in Somerset. This is a sheeps’ milk alternative to their popular goats’ cheese Rachel. The cheese has a distinctive orange/brown rind with the occasional bright spot of natural mould. The flavour is warm and nutty with a lingering hint of sweetness. Perfect for summer with notes of fresh grass and meadows. The cheese pairs perfectly with light, delicate white wines and quince jam.
This cheese has just won Supreme Champion at the 2021 British Cheese Awards.
