This is a washed curd cheese similar to something you may find in theChampagne region of France.
Leaving this cheese to age slightly longer will develop the flavours to a moredistinct and pronounced level while the texture becomes more soft and creamy.
This is a well-loved and versatile cheese; bake it for dipping, add it to a cheeseboard, or simply boost the flavours of your bacon sandwich (goes particularlywell with bacon and cranberry sauce).
