Suffolk Gold cheese is a semi-hard cheese, not unlike Cheddar, though a little softer, which is made with vegetarian rennet and pasteurised cows milk. The milk is pasteurised on site in Creeting St Mary in Suffolk, England, on the family run farm, by Jason and Katherine Salisbury since 2004, who sell their cheeses under the trade name Suffolk Farmhouse Cheeses, as this embodies the cheeses traditional handmade methods and recipes. The milk used for Suffolk Gold is taken from the farm’s own pedigree herd of award-winning Guernsey cows, whom Jason is particularly fond of, knowing each of them by name and character. Due to their superb care and feed quality, the milk produced from Jason’s cows is a golden, lusciously creamy milk, used to make cheeses, cream, butter and yoghurt..Suffolk Gold does have a very creamy, buttery flavour thanks to the high-quality milk used in production. The paste of the cheese has a distinguishable twang to it and expresses the rich golden colour of the cheese deliciously. Suffolk Gold works wonderfully on traditional oatcakes, or with slices of apple. It also makes a great accompaniment to many wines, and makes superb frittata, as it has fantastic melting properties too. You can really be adventurous with this one in the kitchen, and Suffolk Gold and bacon quiche is highly recommended.
Please note all cheeses are hand-cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can!
