Wissignton is made by Becky Efenery at Wilton Farm in Deopham near Wymondham. Hand made on the farm from the milk of 60 Friesland daily ewes. It’s a full fat, pasteurised firm ewe's milk cheese. It’s nice to look at, clean, milky white in colour with what is usually a hard dark rind. with a taste and texture rather like Spanish Manchego. It’s a hard cheese of course, but it does have some give to it and is easy to cut without it falling apart The taste and texture is likened by some to a Spanish Manchego, but we would compare it more to a pecorino fresco which is generally a younger, fresher version of the pecorino we typically know.
Please note all cheeses are hand-cut, therefore the weights listed are approximate. We work very hard to cut them as accurately as we can!
