This strong ale is made with a grist of 75% malted wheat and 25% malted barley, plus Fuggles hops from the All Day Brewing hopyard.
It has undergone a complex mixed fermentation, using in-house cultures. This gives this a tart, fruity sourness quite unlike conventional wheat beers.
This beer was allowed to age in a French oak barrel for eleven months being put into these sharer bottles in June 2020.
