This is a special, limited edition mead. It is brewed in medieval style, using a variety of honey from around Norfolk with batch cultivated yeast, producing a yeast perfectly adapted to the honey.
It is aged for two years in oak barrels in a system with which medieval brewers would have been familiar. Its taste profile is still sweet but incredibly smooth with notes of vanilla obtained from the ageing process. Complex and unique.
Only 400 bottles have been produced.
