Rare and delicious polenta from the French Basque country. The Grand Roux Basque corn used to be grown in the region in the 16th century and completely disappeared afterwards. At the time. it was mostly planted to be milled into the traditional Basque pancake, Taloak. It is now being promoted and grown by a group of 15 producers in the Basque Country, under the name Arto Goria.
The poenta has a rich texture and unique taste. It has an incredible genetic diversity, each corn showing different colours on a spectrum of yellow to red.
