Others spend considerably longer ageing on their lees, developing greater complexity and flavours that can include brioche, toast and pastry alongside the fruit.\u003c\/p\u003e\n\u003cp\u003eYou'll also find sparkling rosé, bringing red-berry flavours such as strawberry and raspberry into the mix.\u003c\/p\u003e\n\u003cp\u003eUnderstanding a few of the words on the bottle can help you choose between them.\u003c\/p\u003e\n\u003ch3\u003eTraditional Method or Charmat – what's the difference?\u003c\/h3\u003e\n\u003cp\u003eThese are two different ways of creating sparkling wine.\u003c\/p\u003e\n\u003cp\u003eWith the \u003cstrong\u003etraditional method\u003c\/strong\u003e, the second fermentation – the fermentation that creates the bubbles – takes place inside the individual bottle. The wine can then spend months or years resting on its lees before being disgorged.\u003c\/p\u003e\n\u003cp\u003eThat extended contact can give traditional-method sparkling wines greater complexity, with the familiar \u003cstrong\u003ebrioche, toast and biscuit characteristics\u003c\/strong\u003e often associated with Champagne and other traditionally made sparkling wines.\u003c\/p\u003e\n\u003cp\u003eWith the \u003cstrong\u003eCharmat method\u003c\/strong\u003e, the second fermentation takes place in a pressurised tank rather than in each individual bottle.\u003c\/p\u003e\n\u003cp\u003eThis method tends to preserve more of the wine's \u003cstrong\u003efresh, aromatic and fruit-driven character\u003c\/strong\u003e. Prosecco is probably the best-known example of sparkling wine commonly made this way, although the grapes and resulting Norfolk wines can be quite different.\u003c\/p\u003e\n\u003cp\u003eNeither method is inherently “better”. They simply produce different styles of sparkling wine.\u003c\/p\u003e\n\u003ch3\u003eWhat does Brut mean?\u003c\/h3\u003e\n\u003cp\u003e\u003cstrong\u003eBrut refers to the sweetness of the finished sparkling wine – not the grape variety or the way it was made.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eA Brut sparkling wine is relatively dry and is one of the styles you'll most commonly encounter.\u003c\/p\u003e\n\u003cp\u003eYou may also see \u003cstrong\u003eExtra Brut\u003c\/strong\u003e, which generally contains even less residual sugar and therefore tends to taste particularly dry and crisp.\u003c\/p\u003e\n\u003cp\u003eSo a wine can be both \u003cstrong\u003etraditional method and Brut\u003c\/strong\u003e: one term tells you how its bubbles were created, while the other gives you information about its sweetness.\u003c\/p\u003e\n\u003ch3\u003eWhat is Blanc de Blancs?\u003c\/h3\u003e\n\u003cp\u003e\u003cstrong\u003eBlanc de Blancs literally means “white from whites”.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eOn a sparkling wine label it tells you that the wine has been made entirely from white grapes, rather than from a combination of white and red grape varieties.\u003c\/p\u003e\n\u003cp\u003eIt doesn't tell you how sweet the wine is, nor does the term itself tell you whether it was made using the traditional or Charmat method.\u003c\/p\u003e\n\u003cp\u003eThat's why you might see several of these descriptions together on the same bottle.\u003c\/p\u003e\n\u003ch3\u003eAnd what about sparkling rosé?\u003c\/h3\u003e\n\u003cp\u003eSparkling rosé brings another dimension to Norfolk sparkling wine.\u003c\/p\u003e\n\u003cp\u003eIts colour and red-fruit characteristics come from red grapes and the winemaking process used by the individual producer. Expect styles ranging from delicate, pale and elegant through to more pronounced strawberry, raspberry and summer-fruit flavours.\u003c\/p\u003e\n\u003cp\u003eLike white sparkling wine, rosé can be produced using different methods and at different levels of sweetness.\u003c\/p\u003e\n\u003ch3\u003eWhich Norfolk sparkling wine should I choose?\u003c\/h3\u003e\n\u003cp\u003eIf you like \u003cstrong\u003efresh, lively and fruit-forward sparkling wine\u003c\/strong\u003e, look towards wines where the emphasis is on preserving the aromatic character of the grapes, including Charmat-method wines.\u003c\/p\u003e\n\u003cp\u003eIf you enjoy the \u003cstrong\u003etoast, brioche and complexity associated with Champagne-style sparkling wines\u003c\/strong\u003e, look for traditional-method wines, particularly those that have spent an extended period ageing on their lees.\u003c\/p\u003e\n\u003cp\u003eFor something particularly dry, look for \u003cstrong\u003eExtra Brut\u003c\/strong\u003e.
