Emmental is a yellow, medium-hard cheese that originated in the area around Emmental, Switzerland. It is one of the cheeses of Switzerland, and is sometimes known as Swiss cheese. Emmental Cheese is light yellow, has a semi-firm to firm texture, and is full of holes. Its flavour is variously described as mild, slightly nutty, almost fruity with a slight bite at the finish, and like a less buttery Gruyère
