Siobhán Ni Ghairbhith, a former educator now turned cheesemaker, crafts Karst with the guidance of her small team in the town of Inagh, just south of the scenic Burren in County Clare. Using goat's milk from the farm's Saanen and Toggenburg herds, this cheese displays a gentle, creamy texture with a mild, mellow flavour.
